Jodhpur is one of the famous Red chili growing district of Rajasthan. Mathaniya Red chili of Jodhpur is famous for its reddish color. Because it is identified with this district only, this variety of chili whole has come to known simply as the Mathaniya lal Mirch. It is expensive because its value in cooking has been appreciated by outside world and the mirch gets exported to the Arab nation. It is used only as dry spice .It lends pungency to a dish and also color and body.

The Egyptian used it for embalming. The Asians are said to have it as an aphrodisiac. Pepperine is considered to be the major constituent responsible for the bitter taste of black pepper and has been used to impart pungency to dishes. 
The high value and very high cost of cultivation has increased the risk, and thus commercial growers take extra ordinary precautions in the cultivation of Black Pepper. With the result under conventional farming there is a very heavy use of Chemical Pesticides in commercial cultivation.
